Steps to follow:

Mix the two types of flour and pour them into a bowl, sifting them to aerate. In your mountain of flour, make a hole in the center of about 3 cm in diameter, removing a small amount with your hands. This is a recipe for fat-free and yeast-free fried cakes.

In that hole that you have formed in the center, pour the small spoonful of salt, half of the sugar and, then, the three of sunflower oil.

Heat the cup of water in the microwave (or in a saucepan over the fire) for just a few seconds without bringing it to a boil. While it is warm, pour the water into the bowl where you have the flour and the rest of the ingredients.

Now is the time to form the dough for easy-fried cakes. Mix all the ingredients first with the help of a spoon and then with your own hands. When the flour and water begin to bind, remove the dough from the bowl and continue to shape it on a flat, clean, and floured surface to make it easier for you to continue kneading. Do it by making enveloping movements until you obtain a homogeneous, compact and lump-free dough. You will need a kneading time of at least 10 – 15 minutes to give you an idea.

When you have obtained the dough, shape it into a ball and wrap it in plastic wrap or a clean, damp cloth. Let it sit for a minimum of 15-20 minutes. If you leave it a little longer, nothing will happen. The dough will remain unalterable and in perfect condition for use for hours. It will even hold you from one day to the next.

After the minimum time, remove the cloth or film and give the dough a roll. Once this is done, cut it into small portions to make balls with your own hands, one for each cake you are going to prepare.

The next step is to roll out the dough. Take one of the balls and flatten it with the palm of your hand. Then stretch with the roller. The dough should not be too thin, nor do you have to worry if the shape it acquires is irregular.

When you have the cake already stretched, it is important to make a hole in the center with your finger or, if you prefer, a blade with the tip of a knife. In this way, they can be fried more quickly and evenly.

In a frying pan, add plenty of sunflower oil and heat it over medium heat. Before starting to fry, the oil must be very hot, but not smoke. Fry the cakes in small quantities. Add 2 units to the pan, or a maximum of three, in each batch. Let them brown for a few minutes and turn them over with the help of a pair of tongs or a fork so that they are done on both sides.

As they are done, remove the fried cakes and place them in a bowl on absorbent paper to remove excess oil.

If you fancy sweet fat-free fried cakes, place sugar in a bowl and pass each of them through the sugar while they are still hot so that it sticks easily.

Fat-free fried cakes admit multiple finishes to suit your tastes. You can, for example, mix the sugar with orange or lemon zest and pass the cakes once fried through this delicious sweet mixture. To give them an original touch, there are those who, when making the basic mixture of flour, salt, oil and water, also add a small spoonful of cinnamon or vanilla essence to enjoy delicious cakes. Fat-free fries also have extra flavors. Although this is the traditional recipe, remember that you can also make salty fat-free fried cakes, substituting, in the finish, the sugar for aromatic spices such as oregano or cumin.
